The end of the Harvest
The harvest has finished, now the equally important part of fermenting, blending and preparing the wines for bottling starts. Several of our wines have finished fermentation and have also been blended together. For example, the blend for our signature Valentina (Cabernet Sauvignon, Mataro, Shiraz and Carignan) has already happen. Wines like the Fikardos Shiraz, Cabernet Sauvignon, Maratheftiko and the limited-edition Leonardo (Organic Mataro and Shiraz) have finished their fermentation. The next step for these wines is to mature them in oak barrels for approximately 9-11 months and then age them in the bottle for another 1 or 2 years.
Wines still fermenting are some Mataro and Cabernet Sauvignon tanks and all our Xinisteri Lots. Xinisteri has become one of or main grape varieties. We love its beautiful peach, green apple and citrus flower flavours. Xinisteri is used in the production of Amalthia (100% Xynisteri), Katerina (medium sweet Xinisteri and Semillon) and for the extremely rare Sunnama.
This was definitely a very challenging vintage. The unexpected rainfall in June and its consequences definitely shocked everyone but in the end, things work out just fine. This year’s protagonists seem to be the Chardonnay, Shiraz and the Xinisteri.
