A wine made exclusively by Cabernet Sauvignon grapes from the region of Paphos. The vineyards are all located within the same area, specifically at the villages Letimpou, Polemi, Kili and Kalepia. The soil is limestone and all the vineyards are planted at an altitude between 450-500 meters on traditional terraces supported by stone walls.
The grapes are hand harvested and selected at the vineyard. They arrive at the winery in small bins to ensure the grapes remain intact and early in the morning when it’s cool. After crushing, the grapes go through a 3 day cool maceration* process that enhances our fruit, varietal flavors. The wine is then fermented during the first 7 days with the skins and later separated from them. The entire fermentation process lasted 22 days at an average temperature of 20 degrees Celsius. The wine was then moved to small oak barrels for Malolactic fermentation and further oak maturation that lasted 11 months.
*The process of cold soaking the grape skins (4-15⁰C) before the fermentation starts.
