Valentina is the first wine of 2016! Our young and vibrant Valentina has become one of Cyprus favorite roses. Valentina’s history goes back in 1991 the year it was first released. Theodoros Fikardos (winemaker and owner) had just started making wine. Among his first wines were Achilleas (red) and Katerina (white), both named after his parents. Following the same idea his next wine was named after his first child, Valentina. He wanted the wines to represent his loved ones and so Achilleas was strong and powerful just like his father, Katerina was a lively and sweet just like his mother and Valentina fresh, delicate and sweet just like his baby daughter.
The 1991 Valentina was made from the local Mavro. Mavro produced light and gentle roses but could not give the desired results Mr. Theodoros wanted. Over the years he experimented with several other grapes and finally ended up using Cabernet Sauvignon as the main grape variety for Valentina.
Cabernet Sauvignon can fully ripen in Cyprus, the resulting wines are higher in alcohol with wonderful red fruit aromas such as strawberries, raspberries and pomegranate. All the vineyards are located in the nearby villages of Kili, Polemi and Kalepia at an altitude of between 400-500 metres.
Valentina is the ideal wine for Cyprus and its climate. The wine can be enjoyed by itself under the warm sun of Cyprus or paired with spicy and sweet dishes. Some create pairings are korma chicken (spicy), Chicken and Strawberries Stir-fry (sweet) and Halloumi with Watermelon.
