The harvest continues with Shiraz grapes. Fikardos Winery’s organic Shiraz vineyards are located at an altitude of 600 meters above sea level near Pano Arodes village.
Our Shiraz grapes will be crushed tomorrow together with Shiraz grapes from Kili and Kalepia villages. This particular patch of grapes will be used to produce our 2015 Fikardos Shiraz. The grapes will be crushed and left to gold soak (cool maceration) for at least 3 days in order to extract more varietal aromas, color and flavor. The resulting juice will then be fermented at low temperatures (16-18 °c). Following the alcoholic fermentation the wine will be matured in oak barrels for approximately 9-10 months.
Shiraz produces dark colored, full body, red wines with aromas such as black pepper, dark cherry and leather.
